I think this is the solution:
S=sum(ArrayZ,1) %%outputs the sum of the colm
ArrayZ=[ArrayZ; S]; %%append the sums
S=sum(ArrayZ,2)%%outputs the sum of the row (included appended new values)
ArrayZ=[ArrayZ, S];
