How should I start learning Image Processing using MATLAB ? Please suggest some good book if any and also collection of sample codes.

MATLAB has several examples on image processing in the Image Processing Toolbox. In addition, I have a few demos posted in my File Exchange: http://www.mathworks.com/matlabcentral/fileexchange/?term=authorid%3A31862
Steve Eddins also has a book on it, plus a blog: http://blogs.mathworks.com/steve/
A good book on image processing in general is The Image Processing Handbook by Dr. John Russ.
