Issue with saving figures (that contain greek letters) as svg format

When I save a figure as a svg file in Matlab I can open it in Adobe Illustrator and edit the text of the individual components that comprise the figure. However, I noticed if any of the figure labels have a greek letter, I lose the ability to change the text. Anyone know why this happens and how it can be fixed? Or is there a different file format that would be better?
