Does increasing number of input variables will increase the classification accuracy of pattern recognition?

At first, I have conducted pattern recognition (nprtool) using 1 variable and 3 output targets. The overall results showed that the classification accuracy was 54%. However when using 16 input variables, the classification accuracy is peaked at 100%. May I know why is this the case?

Well I have 16x36000 input and 3x36000 output data matrices. Does having this much data lead to overfitting? Should I reduce my input number down to 1 while keeping 36000 samples?

There is no simple answer to that question. I believe that some metrics have been developed to indicate under/over-fitting or other similar metrics. Perhaps the toolbox documentation has something on this:
