I want math software that will work for teaching offline (in places where web access is unreliable or nonexistent) on an I-pad (since many students will just have that). I want access to enough of the software to graph solutions to differential equations. Will MatLab on an I-pad be able to do that?
Unfortunately the video your site offers on MatLab on an I-pad is all about trivial things like looking at graphics that already exist. It does not say what MatLab can actually do that way, and it did not address the question of cloud use versus offline use.

Hi. Matlab mobile works fine graphing everything you want. In the case of students with no internet access, I share with them my cell-data to access matlab mobile. Yeap, that's the cost of teaching ;-)

See https://www.mathworks.com/support/sysreq.html: Matlab does not run on iPads, but under macOS Sierra (10.12), El Capitan (10.11) and High Sierra (10.13) only.
The video (by the way: which one?) might show you the online access, but this will not work off-line.

The video I saw was titled Connect to MATLAB from your iPhone, iPad, or Android device, at https://www.mathworks.com/products/matlab-mobile.html
But your answer explains why that video does not show MatLab doing anything! It apparently can't do much on those devices.
