I need to find the distance between a background image and an overflowing foam

I've attached the background image, a foam will flow over the lip there, and I want to determine the distance between the edge of the foam, and the edge of the inside cylinder?
My plan is to detect the edge in the background (pixel coordinates), then find the new edge of the flowing foam (pixel coordinates), and use these to determine the distance. Any other ideas?
