When I use diary to save Command Window output to a text file, the table headers all have "</strong>" formatting, which makes it difficult to read in a text editor. Is there a way to have either the Command Window or diary output suppress the bold headers on tables?

It might not be possible according to the document.
One not-so-perfect workaround is to save the diary to a text file and then show it in Command Window using the "type" command
type diary.txt

Is it possible for you to consider other tools, such as UNIX grep/sed?

You could also use perl, which can be invoked directly from MATLAB using the perl() command.
