Radial distribution of grey value intensities

Hi everyone, I have 2D binary images of a irregular volume object (they are actually slices of that object in a particular axis). I have an array containing the grey value intensities (0 and 255) of size 225x230x241 double. I want to plot these grey value intensities as a function of radial distance. Any guidance would be highly appreciated.

Radial distance from the center of mass of the object.
