Funding a way to describe a curve in x y coordinates

Hello,
I have run an image through a processing toolbox in Matlab (to make it greyscale, adjust contrast, used canny edge function with threshold and sigma). I have now the edges of interest and want to plot them in x and y coordinates, so that I have the curve represented by the points of the edge in the image. I do not know how to approach it, any help would be greatly appreciated!

you can use [rows,cols] = find(...) to get the corrdinates of your points.
if you want to plot a shape you may have a look into the boundary function
