Creating a 3D graph of many 2D-view surface plots

I have many b-scan of ultrasound (these are surface plots top down view of x,depth with z being the amplitude of echoes for each cross section of the object)
So i want to put together these cross sections so to get a diagram for the whole object and I want to create a 3d view where it only shows the echos within the whole object (so probably by limitting amplitude it shows just so I can see a sort of transparent look into the locations of the largest echoes
Does anyone have any ideas?

Can you please attach small part of the data? I'm using MATLAB online (don't have it on my computer) and can't use 19mb size data

@darova I have attached it in the comment above, I attached matlab.mat it's example of my function bScan(y) at some y value.
Maybe I need to make the data volumetric and do contour slice? I'm not sure how to though, I can get [X,Y,Z] = bScan(y) at some Y distance, but I'm not sure how to make it volumetric for use with contour slice

On using contour, you will get the points/ locations (x,y).... do interp2 and you will get the respective z values......do the same for each surface, and save them and plot.
