Can we create Turbine Power Characteristics Curve of Wind Turbine in MATLAB/Simulink but using different x axis instead of turbine speed in turbine speed vs turbine power output with wind speed variations?

I want to create Turbine Characteristics Curve of Wind Turbine in MATLAB/Simulink but can I create different curve that use pitch angle variations or turbine voltage variations instead of turbine speed?

So I want to ceate Turbine Power Characteristics like above but instead of using Turbine speed as x axis I want to use pitch angle or voltage output that have been rectified, so it can be used as lookup table in my Neural Network Controller.

Anybody know the methods? Thanks in advance.
