intensity graph for xy vs z

how to plot a graph for x,y vs z

i have a matrix and want to plot the intensity graph such that it gives at perticular Z what is X and Y.

i am trying to plot drain voltage and gate voltage on X and Y axis for the current,

i need an intensity graph which gives me information

something like this

x axis- drain voltage

y axis - gate voltage

and in the color bar the current(z)

so that i get information of how it is varying with XY and the intensities
