Interpolation of velocity and vorticity data at uniformly distributed mesh with the given x and y coordinates

Hello all!

I am a relatively new user of Matlab, working on a project of the flow field around a circular cylinder. I have the x-velocity, y-velocity, and vorticity at 1001 time steps with given x and y coordinates. Since the mesh I have used is not uniformly distributed so I need to interpolate these(x-velocity, y-velocity, and vorticity) for uniformly distributed mesh at each time step. My x-velocity, y-velocity and vorticity matrix is [10000*1001] and x and y coordinate matrix are [10000*1]. Can you please help with this. Thanks!
