There is no fixed maximum for frequency or voltage of signal acquisition. Individual signal acquisition boards have restrictions; and your computer might not be able to operate quickly enough to process all of the signals.

You should research the capabilities of your existing data acquisition card.
Note: many data acquisition cards have a relatively limited voltage range of only on the order of 10 volts. Be sure to read the card specifications before connecting a signal!
Beyond that, in order to know what to do, you have to first decide what your goals are. It often helps if you post the goals.

Looking at your past postings, it appears that you might be attempting to do real-time radar work with sound. Tricky but not impossible with the right equipment; sound should be able to get you into the S band of radar, limit on the order of 3 GHz. http://www.physicsforums.com/archive/index.php/t-144509.html
Unfortunately in the time I spent searching, the highest rate data acquisition chip I found was only 1/2 GHz. The devices from National Instruments (well known ADC manufacturer) are at least 40 times slower than that.
