Grid to scatter data conversion

Hi,
I have two data sets which are not in same size/structure, one is from the observation (lat, lon, vel) and another is from the model (lat, lon, vel). Observed structure is 3101*3 and model structure are 22684*3. I interpolated model data into observed data to make the both data set in same size. The interpolated model data is in grid format but observation data is scatter format. How can I convert the interpolated model data from grid to scatter format with the exact size of observed data?
My final goal is to do the chi-square test for the data sets. I also want to calculate the Pearson Residuals between the both data sets.

I think you couldn't get my question. I have observed data which have 3101 velocity data point on specific lat, lon but my model have 22684 data points on a lat,lon which is bigger than observed area. I interpolate model data using interp2 to find the velocity value same with observed. Now the interpolation results of model is in grid format but I want it in scatter format. Thanks

What is the necessity to go to scatter format? Read about delaunay. http://in.mathworks.com/help/matlab/ref/delaunay.html
