Can I make the Matlab waitbar display the progression of the "imread" function?

No, I don't think so. Waitbar needs a fraction of the total processing time, and you cannot implant this function into a build in function.

You should be considering switching to the Tiff class, which gives you finer-grained control over the parts you read. You might even want to artificially break up the reading of data into chunks so that you could update the waitbar after each chunk.
