Generating a Photo Sphere from 3D matlab data

I'd like to generate a Photo Sphere (link to API) from a Matlab 3D rendering. From what I can tell, I would need to first generate a TIFF from my current camera view, then add the appropriate MetaData to the TIFF, then write the TIFF. To start, how should I define the camera settings to capture the 360 by 180 degree image needed. Can I just treat XMP metadata like XML metadata? Thanks
