Line chart from 3D data at a fixed point

I'm sure this is a very simple question but I have created a 3D array. VorticityMap is 296*301*648 array where 648 is the number of time steps and where there is a vorticity value at every i and j value.

I basically want to plot all the vorticity values at the point 250,250 for each time step to get a line chart. Could someone please explain how i would do this? So basically a vorticity v time chart at a given point.
