Github CI workflow to build mex files

Is there an example of a Github CI workflow to build mex files automatically and release them in a Github release?

Ideally the workflow would build automatically .mex files for all major operating systems and architectures.

I did not see anything relevant in the available Github Matlab actions, so I tried filing an issue, but maybe someone in the community has already solved this problem and has a working example to share.
