Simulate lap time of FSAE Vehicle on a custom track

I am a FSAE student I have started work on MATLAB and now I want to simulate lap time of my vehicle on matlab with my own custom track.How can i do that?Can you give me an idea like a simulink model or any reference from where i can do it?

In simple words i want to find out in how much time vehicle is going to complete a track.
