You will find the definitions, if you search in the internet. What about http://en.wikipedia.org/wiki/Image_gradient ?

I agree with Mr Simon, look online. But to summarize image gradients are commonly used to detect edges in images. Look on wikipedia for Edge detection and Sobel filter for exampels.
