Extract 2D matrix from 3D matrix

Good Day community.
I can create a 3D matrix (Y, X, Z) by buffering the (Y, X) matrices over time (obtained in a loop). Now, I want to extract the (Y, Z) matrix after some time as shown in the diagram below.
How best can I implement this functionality?
