After you draw the lines with plot() and figure out where the intersection point is, use annotation('doublearrow') https://www.mathworks.com/help/matlab/ref/matlab.graphics.shape.doubleendarrow-properties.html to create the arrows.

I could do that, but I am not going to do that. Doing that would require digitizing the curves and creating long lists of arbitrary coordinates to connect.

It would make a lot more sense for you to use your knowledge of what the curves represent in order to figure out how to draw them. Perhaps you can find beta distributions for them.
