What function searches for files just in the workspace?

There is no files in workspace, you can use dir to search files in a current folder

You can search the variables contained in those files

Can you explain what you mean by loaded? what kind of files?

Apparently (at least in R2014b and perhaps earlier releases as well) you can find out what files you have open by name. In the documentation for fopen, under ‘Examples’ see ‘Get Information About Open Files’.
