How to do a transect with a map?

Hello, I would like to know if anyone know and could explain me how to do a transect with a map?

I have in mind something like the image (exemplo), or if anyone know some program where I can do, I will get any advice. Thanks in advanced!

I already have latitude, longitude and the value that correspond to those coordinates. Or also I have something in mind like a 3D plot but with a map, but I didn' find any example.
