real-time communication using packet output/input?

I've made an application which sends data from one pc to another over the internet through the PACKET OUTPUT/INPUT blocks. My question is which internet protocols do these blocks use? is it only UDP and IP? I cant seem to find more information about the use of protocols and delays.
