How to - Third Fit as a difference of two fits ?

Hello,
I have two surfaces which have been fitted using the cftool. Now, I am trying to create a third fit which would describe the difference between those two surfaces. I have searched online for quite a bit but cant find anything.

What equations (and related code and data) did you use to fit your surfaces?
