Customizing Figures Comprehensive Documentation

Hello I am really bored with this trial and error learning process. Besides that, I came to conclusion that it does not give one foundational and comprehensive understanding of the subject. Yes, you do how to to some stuff but you do not really understand why things works that way. Through trial and error process you kind of develop your logic that might not coincide with the foundational logic of the programming language. Correcting this later, is as difficult as, for example, wrong pronunciation of an English word (for English as a foreign language speakers).
Given the brief description of the poblem above I have the following questions: Could any experienced user or even developer of MATLAB suggest a source where I will be able to start learning matlab figures and graphics scientifically from the very begining? I.E. I want to understand how figures, plots and graphics are constructed by MATLAB? What is the logic behind these object? What options are customizable there? How to reach every detail of the figure graphics and plots etc.?

Have you read through all the pages in the Graphics category in the documentation?

I am on my way through it. Too muc for one day. The are about 698 pages in total.
