How can i change the text's font size using fprintf?

Those are all preferences. See the Fonts section.

There is no other way (to my knowledge) to change them.

The only way you an change those font properties are with the preferences.

There is no other way to change them in software. See the documentation sections on: Access and Modify Settings and Create Custom Settings, and the other documentation sections linked to in and at the end of those documentation pages.

A File Exchange search brought up some contributions that may do what you want. Look through that search (click on the link) to see if any are relevant to your requirements.
