Plot 3D Data (Interpolating Matrix) for Beam Profile

Hi!

I'd like to plot the data generated by the tool imaged at the bottom of this screen in 3D. It generates data with X & Y coordinates, as well as normalized dose responses (Height/ Z). So I dont have every point height point in the X, Y grid. Do I need to interpolate the matrix inbetween and then plot with surf?
