How to plot velocity-time graph using quiver information ?

Hi there,
Is there a way to plot a velocity-time graph using quiver's plot information (U and V data)?
The quiver plot was created between two frames using the Horn-Schunck optical flow method https://www.mathworks.com/matlabcentral/fileexchange/22756-horn-schunck-optical-flow-method?s_tid=FX_rc2_behav
