How does one assign a different maker to each scatter without having to call scatter multiple times?
Is it possible to do this? Similar to the way lscatter works? I want to have a markers list that its index corresponds to data and marker (and color if possible).

Sorry, the internal objects only permit one shape for each scatter call.
To create the markers list, scatter() or plot() multiple times recording the handles, using nan as the coordinates, and legend() against the handles. The objects will not be visible on screen because of the nan coordinates, but the appropriate handles will be generated for legend purposes.
