I would like to show the result of impixelinfo while scrolling next to the mouse on the image like the attached image, or if that's not possible, show it in a box under the intensity image.

https://www.mathworks.com/help/matlab/ref/datacursormode.html and configure the UpdateFcn property to a function that displays whatever you want displayed.
