My reading of that is that you need to evaluate at additional locations with low x in order to get a reasonable plot. I think the sudden jags are due to not having sampled finely enough.

I understand you wish to read the readings effectively for your MATLAB 3D plot.
Kindly refer to the plot3() method documentations and examples to understand the workflow for the method:
These examples shall provide you valuable insight and intuition into making and understanding your 3D plots.
Based on my interpretation, your plot has a liner relationship between variables 'x' and 'y', until a kink appears after which the 'y' value plateaus and remains constant for the entire domain of 'x'. The 'z' value increases but in inconsistent amounts, i.e. sometimes in smaller packets, sometimes in broader patches.
