Plotting data like that is a pain IMHO. Either try:

- SliceOMatic: http://www.mathworks.com/matlabcentral/fileexchange/764-sliceomatic

- IsoSlicer: http://www.mathworks.com/matlabcentral/fileexchange/55635-isoslicer

Or if slicing at arbitrary angles is a must do:

1) WriteTOVTK: http://www.mathworks.com/matlabcentral/fileexchange/23416-writetovtk

Then,

2) Open it in Paraview and set to slice mode: http://www.paraview.org/
