How do I create a time-dependant variable from a table ?

Hello everyone, I would like to create a timedependant variable from an excel-table to use as an input in a Simulink-model. What would be a good way to do that ?
To give a concrete example, I would like to compare the performance of a windturbine with different stats (purely mathematical) for a given real measurement of windspeed over time. The windspeed is in an Excel-sheet and the time for the given window can be noted both absolute or as the time of day.
How do I create that variable or is there another way to get that information into Simulink ?
I am still very inexperienced with this software, so please feel free to be ellaborate.

if your Excel spreadsheet is formatted as required, then the From Spreadsheet block will be the most convenient:
