It looks to me as if you would currently use Psychtoolbox 3.0.19 Beta.
I am a bit uncertain, but it looks as if you currently would need to use MATLAB for Intel Mac under Rosetta emulation, not R2023b for Apple Silicon

I understand that you want to know how to install Psychtoolbox in MATLAB for Mac OS M2 chip.
You can download all versions of Psychtoolbox-3 from the Version History tab in the link below. https://www.mathworks.com/matlabcentral/fileexchange/76411-psychtoolbox-3?s_tid=srchtitle_support_results_1_psychtoolbox
Please note that MacOS’ version 10.15.7 is recommended but not macOS 11.
