I'm not sure why the author chose 0.6 as the forward voltage and 0.1 as the drop voltage, when the datasheet provides 0.7 V as the forward voltage.
Does the voltage drop across the diode have to be assumed here?

For this case forward voltage is 0.7V when the forward current is 5mA. Forward voltage is not actually a fixed value. The piecewise linear Diode block in Simscape Electrical defines Vf as the ‘Minimum voltage that needs to be applied for the diode to become forward-biased.’ We need two values for the forward voltage to compute the voltage drop and the diode on resistance, the minimum and the value at a given current. I hope this helps.
