Creating a new toolbox

I have a bunch of MEX-files. I want to create a new toolbox and use these functions in MATLAB. What would be best way to create a new TOOLBOX for these files?

I would have an installation file that unzips all of your MEX/MATLAB files into a specific directory (or directory structure) and adds this to the path.
