How to change fonts & styles in PUBLISH?

The Matlab PUBLISH command ('doc') prepares a Word document, but sometimes the users may want to pick the fonts; e.g. Times New Roman.
Is there any way to do this up front as part of the options in PUBLISH?

You can't do it directly from publish, like you would do with html or LaTex output through a xsl style sheet.
However, and I think it is actually far more user-friendly, you can very well publish your Word document, and then inside MS Word go to Style -> Change Style -> Style Set -> yourCustomStyleSet.
You'll find many references on the web on how to create a custom Style Set for Word, so create a nice-looking one, and use it on all of your documents. Good luck!
