What is the name of the method used for the simulation of Shepp Logan phantom having dimention 256x256 with number of coils=8.

The phantom-function is a standard .m-function available in source-code, so you can read it clean and plain. It is simply a function that generates a couple of ellipsoids with different intensities and positions (they might even overlap). There's nothing peculiar about that function whatsoever.
