If you are reffering to the App Designer Inspector and Table property RowName, you need to use linebreaks:
S1
S2
S3

You are doing it right using appdesigner. Programatically, row name can take several format (cell-str, matrix, categorical...), read this uitable properties.
The reason why you see nothing is because you wont see any row name if there is no data in your table. You need to fill Data property of your uitable.
% Row name are not displayed
uitable(uifigure(), 'RowName', {'A', 'B', 'C'})
% Row names are displayed
uitable(uifigure(), 'RowName', {'A', 'B', 'C'}, 'Data', rand(3))
