I created exercises in MATLAB Grader for several courses that I've been teaching. They are all under my account using the university email to log in. Now I'm changing job and my university email will become invalid. How do I save and/or export the contents I created in MATLAB Grader so that I can use them in the future with my new MATLAB account?

There are a few options.
The simplest is probably to create the new MathWorks account first. Then log into MATLAB Grader using your current university account and invite your new account to the collection(s) using the Collaborate with Instructors option. Collaborators have all the same rights in a collection as the owner.
If you created courses, you can also invite your new account as an instructor using the Manage People option. However, in courses, invited instructors do not have all the save rights as the owner. In this case, it might be better to contact support and ask them to transfer ownership of the course(s) to your new account. See this Answer.
You might also consider contacting support to suggest an enhancement to the product to better address your scenario as well.
